Question!

If I was, say, writing an AU where, um, let's just say professional ballroom dancing is involved. If I were doing this... Can I get away with having Arthur call Cobb by his first name, even though it's not a thing we see him do in canon?

It's not really a big deal, I just keep typing Dom instead of Cobb. Annoying, stupid fingers. >:|

ABSOLUTELY.

Not to just like, jump all on top of this or anything, but I think one of the beauties of an AU is that you can pick and choose which canon details apply. In the world you're writing, maybe Arthur and Cobb don't get to know each other in the line of fire, so maybe it makes sense for Arthur to call him Dom, not Cobb. Or something, I don't know, authority roles shifting, what have you--MY POINT BEING, trust your fingers. You wouldn't be writing it that way if it didn't sound like it was meant to be written that way.
